With The Butchery, we hope to convince you about the potential of Moldova - a humble, isolated country blessed with the ability to produce wines that compete extremely favorably on the world's stage! One of the oldest wine growing regions in the world, Moldova is only getting better with age. Wineries are fully modernized and employ forward thinking winemakers who strive to please the international market with bright and modern styled wines. Vineyards have been replanted with the best clones of Cabernet, which is quickly becoming one of Moldova’s signature red wines. We're so excited about Moldova's recent burst onto the international wine scene, redefining our expectations of the world’s hot spots for Cabernet.
 

WINE PROFILE

A strikingly round, deep and nuanced wine, The Butchery delivers plenty of heft and power yet still maintains a sense of balance and finesse. It pours a deep ruby/purple color, followed by a smorgasbord of cassis, crushed violet and dark chocolate flavors. The tannins are fine, the mid-palate layered and all edges rounded - a fine testament to the heights that Moldova can reach with Cabernet Sauvignon.

 

FOOD COMBINATIONS
Pizza, pepper steak, blue cheese, winter stews, hearty roasted vegetable tart, ziti with tomato / basil sauce.

 

MOLDOVA DELIVERS

The Butchery Cabernet hails from Moldova, one of the cradles of civilization and the location of some of the earliest traces of agricultural activity in the world. Since then, area farmers have learned a thing or two about grapes in particular, and today, the Cabernet Sauvignon vines are planted on terraced vineyards on hillsides overlooking the mighty Dneiper River.

The climate is very similar to Bordeaux, and it’s no surprise then that the wines share a similar character – chiseled and forward, with intense aromas and berry fruit on the palate. We are thrilled to offer this vintage of Moldovan Cabernet, so that fans of great Cabernet can continue to expand their horizons of how to define a classic wine region and where incredible wine grapes can be grown.

 

WINEMAKING PROCESS

The Butchery Cabernet Sauvignon undergoes a cool, prolonged fermentation in stainless steel tanks under the watchful eye of one of the country’s most talented enologists. Our Moldovan Cab is aged in oak before being carefully bottled under rigorous quality control standards to ensure optimum freshness and fruit purity.
