The Emilia-Romagna region of Italy is at a historic crossroads, where East meets West, North meets South. All of these outside influences have left their mark on the region's world-famous cuisine, for which enthusiasts like us travel in droves to experience the food and wine culture. We selected Castagno Rubicone Cabernet for its ability to celebrate Emilia-Romagna's gifts without leaving the comfort of our homes - break out the ham, cheese and olives and you're there!
 

WINE PROFILE

Castagno is a modern, elegant wine with cherry, mocha and spice overtones. It is juicy and plump, with cherry, plum and licorice flavors followed by a beam of bright acidity. Medium weight, silky and built for drinking with food, we love this IGP Rubicone for its ability to embody the vivid, lavish character of Italian Cabernet Sauvignon.

 

FOOD COMBINATIONS
Filet mignon, creamy camembert cheese, spaghetti and meatballs, roast beef, cheesy polenta, herb-crusted salmon.

 

CABERNET BREAK FROM THE NORM

Our Cabernet hails from the famous Rubicone sub-region of Emilia-Romagna, where knowledge and tradition courses through the blood of our winery partners. This hilly region in the north-east of Italy has long been associated with classically-styled Cabernet wines, some of the most celebrated in the entire country. This stylish Italian red is made in the classic tradition – with a long, gentle fermentation that extracts the grape's singular bouquet, red fruit character and brisk, food friendly acidity. This Italian Cabernet is a perfect expression of the Emiglia-Romagna region – it’s racy like a Ferrari, age-worthy like balsamic and, like Parmigiano Reggiano, a perfect complement to every meal!

 

WINEMAKING PROCESS

With ideal growing conditions and millennia of experience, Italy is red wine paradise, and the celebrated Cabernet grape has been welcomed with open arms since its’ arrival from neighboring France. Castagno expresses Italian winemaking know-how by preserving the grape’s natural tendency to produce exuberant, structured wines while coaxing a stylish, polished texture that’s purely Italian.
